Chicken and Cheese Taquitos

This is a recipe I made up a few years ago. It has been a favorite ever since. I hope you will enjoy this simple, easy recipe. What makes it easy is using my recipe for IP shredded chicken {} and having your tortilla’s pre-cooked. I only use Tortillaland uncooked tortillas-once you try these, you just can’t go back. If I know I will be busy at dinner time, I’ll even shred all my cheese in the morning too.



  • Mix sour cream and taco seasoning in a medium bowl. Add chicken and stir until thoroughly coated.
  • Preheat oven to 400 Degrees. I use a baking sheet that doesn’t need greasing for this recipe. But if you just have a “normal” baking sheet, you’ll want to very lightly spray it first.
  • Inside each tortilla, add chicken mixture and a handful of cheese. Roll up and place on baking sheet. If making cheese only, then place cheese in center and fold up like an envelope.
  • Once all your taquitos are done, baste the tops with olive oil.
  • Bake at 400 Degrees, for 15-18 minutes or until tops of tortillas are lightly browned and cheese is melted.
  • Serve with salsa, guacamole, sour cream, refried beans, hummus, etc.

I hope that you enjoy this simple meal. It comes together quickly and my kids love it! Although they are weird and dip theirs in ketchup or ranch dressing. I’ll take salsa, refried beans, and guacamole any day!

PS You want to make sure you don’t have too much liquid in the sauce with the chicken. If there is too much sauce, then the bottom of your taquitos can become soggy. Also, my baking sheet is corrugated, so that helps with keeping it all crunchy. You could also use a rectangular baking stone.
